Zucchini and Corn Tostadas

Flavorful and easy to prepare, this is one tostada you’re gonna want to make a lotta.

  • 2 small zucchinis, diced
  • 3/4 cup corn
  • 1 tablespoon olive oil
  • seasoned salt, to taste
  • 3/4 cup Cedar's Garlic Hommus 
  • 6 corn tortillas  
Serves 6 Total 15-29 Minutes


  1. Heat the broiler in the oven to high. 
  2. Make the tostadas by placing the corn tortillas in a single layer on a baking sheet. 
  3. Place the baking sheet on the middle rack in the oven and watch them with a careful eye. Once they have a few brown spots, flip over the tortillas and repeat on the other side. The tortillas will warp. 
  4. Remove them from oven and allow to cool while making the toppings.
  5. Heat oil in a skillet over medium high heat. Add the zucchini and corn. 
  6. Cook and stir until zucchini is slightly translucent. Add seasoned salt to taste. 
  7. Place 2 tablespoons Cedar's Hommus on each tostada and spread. 
  8. Top with zucchini and corn mixture and serve.
