Zucchini & Corn Tostadas

Look out, taco trucks!
Serves 6 Total 15-29 Minutes


  • 2 small zucchinis, diced
  • 3/4 cup corn
  • 1 tablespoon olive oil
  • Salt, to taste
  • 3/4 cup Cedar's Garlic Hommus 
  • 6 corn tortillas  


  1. Heat the broiler in the oven to high. 
  2. Make the tostadas by placing the corn tortillas in a single layer on a baking sheet. 
  3. Place the baking sheet on the middle rack in the oven and watch them carefully. Once they have a few brown spots, flip over the tortillas and repeat on the other side. The tortillas will warp. 
  4. Remove them from oven and allow to cool while making the toppings.
  5. Heat oil in a skillet over medium high heat. Add the zucchini and corn. 
  6. Cook and stir until zucchini is slightly translucent. Add salt to taste. 
  7. Place 2 tablespoons of Cedar's Garlic Hommus on each tostada and spread. 
  8. Top with zucchini and corn mixture and serve.
