Fall Pumpkin Salad

Autumn in a bowl.
Serves 4 Total 15-20 MINUTES

INGREDIENTS

  • 6 cups spinach
  • 2 cups roasted pumpkin spices (about 15-20 slices)
  • ¼ cup walnuts, halved
  • ¼ cup pumpkin seeds
  • ¼ cup pomegranate arils
  • 1/3 cup crumbled blue cheese
  • ¼ cup Cedar’s Organic Pumpkin Hommus
  • Salt and pepper, to taste

DIRECTIONS

  1. Chop spinach and toss in a salad bowl.
  2. Add in roasted pumpkin slices, walnuts, pumpkin seeds, pomegranate arils and blue cheese. Toss well.
  3. Drizzle with Cedar’s Organic Pumpkin Hommus over the entire salad.
  4. Season with salt and pepper.
  5. Serve and enjoy.
