Mediterranean Grilled Bruschetta Chicken

INGREDIENTS
Cedar’s Topped Organic Roasted Red Pepper Hommus
4 chicken breasts
Fresh mozzarella
1 pint cherry tomatoes, halved
1 garlic clove, diced
2-4 tablespoons olive oil
Salt and pepper
Fresh basil, torn to small pieces
DIRECTIONS
Season cherry tomatoes with olive oil, salt and pepper.
Add garlic and 6 large basil leaves. Set bruschetta aside.
Brush chicken breasts with olive oil and season with salt and pepper.
Grill chicken breasts on medium high heat for 10-12 minutes, flipping halfway through.
Top with a dollop of hommus, a slice of mozzarella and a scoop of bruschetta.
Garnish with fresh basil.
