Mediterranean Grilled Bruschetta Chicken

Love it like there’s no tomato.
Serves 4 Total 30-60 Minutes


  • Cedar’s Topped Organic Roasted Red Pepper Hommus
  • 4 chicken breasts
  • Fresh mozzarella 
  • 1 pint cherry tomatoes, halved
  • 1 garlic clove, diced
  • 2-4 tablespoons olive oil
  • Salt and pepper
  • Fresh basil, torn to small pieces


  1. Season cherry tomatoes with olive oil, salt and pepper.
  2. Add garlic and 6 large basil leaves. Set bruschetta aside.
  3. Brush chicken breasts with olive oil and season with salt and pepper.
  4. Grill chicken breasts on medium high heat for 10-12 minutes, flipping halfway through.
  5. Top with a dollop of hommus, a slice of mozzarella and a scoop of bruschetta.
  6. Garnish with fresh basil.
