Tzatziki Potato Salad

You say potato. We say, THIS SALAD THO!
Serves 4 Total 30-60 Minutes

INGREDIENTS

  • Cedar’s Tzatziki, any flavor 
  • 1 pound fingerling potatoes
  • 1 cup feta, crumbled 
  • Lemon
  • Parsley
  • Olive oil
  • Salt and pepper

DIRECTIONS

  1. Heat oven to 400 F.
  2. Slice fingerling potatoes in half and drizzle with olive oil.
  3. Season with salt and pepper.
  4. Roast for 30-35 minutes.
  5. Serve potatoes on a platter topped with dollops of Cedar's tzatziki and feta.
  6. Garnish with parsley and lemon wedges.
