Tzatziki Potato Salad

Total 30-60 Minutes
INGREDIENTS
Cedar’s Tzatziki, any flavor
1 pound fingerling potatoes
1 cup feta, crumbled
Lemon
Parsley
Olive oil
Salt and pepper
DIRECTIONS
Heat oven to 400 °F.
Slice fingerling potatoes in half and drizzle with olive oil.
Season with salt and pepper.
Roast for 30-35 minutes.
Serve potatoes on a platter topped with dollops of Cedar’s Tzatziki (any flavor) and feta.
Garnish with parsley and lemon wedges.
