Veggie Fried Rice Over Hommus

The Rice is Right
Serves 4 Total 30-60 Minutes


2 tablespoons sesame oil
1 stalk lemongrass, finely diced
½ tablespoon fresh ginger, grated
2 garlic cloves, diced
2 tablespoons soy sauce
3 cups wild rice, cooked
½ cup kale, shredded
2 medium carrots, peeled and chopped
1 red bell pepper, chopped
½ cup mushrooms, chopped
½ cup peas
Sesame seeds
1 scallion, diced
1 10-oz container of Cedar’s Garlic Hommus with Toppings


  1. Over medium high heat, sauté garlic, lemongrass and ginger in sesame oil.
  2. Add the rice, kale, carrots, pepper, mushrooms and peas.
  3. Add the soy sauce.
  4. Cook 8-10 minutes.
  5. Serve over Cedar’s Garlic Hommus with Toppings and garnish with sesame seeds and scallion.
