Tzatziki Potato Salad

Not your average potato salad, we give these oven-roasted spuds space to mingle with refreshing flavors of Cedar’s Tzatziki, zesty lemon and fresh parsley. 

INGREDIENTS

  • Cedar’s tzatziki
  • 1 pound fingerling potatoes
  • 1 cup crumbled feta
  • Lemon
  • Parsley
  • Olive oil
  • Salt and pepper
Serves 4 Total 30-60 Minutes

DIRECTIONS

  1. Heat oven to 400 F.
  2. Slice fingerling potatoes in half and drizzle with olive oil.
  3. Season with salt and pepper.
  4. Roast for 30-35 minutes.
  5. Serve potatoes on a platter topped with dollops of Cedar's Tzatziki and feta.
  6. Garnish with parsley and lemon wedges.
