Sweet Potato Sliders

INGREDIENTS
Cedar's Topped Organic Roasted Red Pepper Hommus
2 large sweet potatoes
Olive oil
1 shallot, diced
2 sweet peppers, diced
1 tablespoon capers
2 tablespoons fresh cilantro
2 tablespoons rice vinegar
Salt and pepper
DIRECTIONS
Cut sweet potatoes into coins.
Cook in a skillet with olive oil, salt and pepper on medium heat until cooked through and crisped.
Make a quick relish with shallot, sweet peppers, capers, cilantro, rice vinegar, olive oil, salt and pepper.
Top sliders with a layer of Cedar's Topped Organic Roasted Red Pepper Hommus and a scoop of relish.
