Sweet Potato Sliders

Serves 4 Total 30-60 Minutes

INGREDIENTS

  • Cedar's Topped Organic Roasted Red Pepper Hommus
  • 2 large sweet potatoes
  • Olive oil
  • 1 shallot, diced
  • 2 sweet peppers, diced
  • 1 tablespoon capers
  • 2 tablespoons fresh cilantro
  • 2 tablespoons rice vinegar
  • Salt and pepper

DIRECTIONS

  1. Cut sweet potatoes into coins.
  2. Cook in a skillet with olive oil, salt and pepper on medium heat until cooked through and crisped.
  3. Make a quick relish with shallot, sweet peppers, capers, cilantro, rice vinegar, olive oil, salt and pepper.
  4. Top sliders with a layer of Cedar's Topped Organic Roasted Red Pepper Hommus and a scoop of relish.
