Pesto Pasta Salad

Fresh, flavorful and great as a main or side.
Serves 4 Total 30-60 Minutes

INGREDIENTS

  • Cedar's Topped Organic Pesto Hommus
  • 16 oz pasta, any shape
  • 2 cups arugula
  • 1⁄2 cup kalamata olives, thinnly sliced
  • 1⁄2 cup cherry tomatoes, halved or quartered
  • 1/2 cup small mozzarella balls
  • Salt & pepper to taste

DIRECTIONS

  1. Bring a pot of salted water to boil and cook your pasta to box directions. Before draining, reserve 1/2 cup of pasta water. After draining rinse the pasta under cool water. 
  2. Place pasta in a bowl and stir in Cedar's Topped Organic Pesto Hommus along with the reserved pasta water. Toss until evenly coated. 
  3. Add arugula, kalamata olives, mozzarella cheese and cherry tomatoes.
  4. Season with salt & pepper. Enjoy!
