Mediterranean Meatballs

Total 30-40 Minutes
INGREDIENTS
1 cup orzo, cooked
½ cup Cedar’s Tzatziki, any flavor
¼ cup unshelled pistachios, chopped
½ cup greens
Meatballs
1 pound ground beef
½ cup breadcrumbs
½ cup milk
1 large egg
½ cup Parmesan, grated
2 teaspoons kosher salt
2 teaspoons ground black pepper
DIRECTIONS
Preheat oven to 400 °F.
In a mixing bowl, combine the breadcrumbs and milk. Stir to combine.
Whisk the egg, Parmesan, salt and black pepper in a separate bowl.
Combine the two bowls and mix.
Combine ground beef with the mix. Form into meatballs with hands.
Line meatballs on an aluminum foil-covered baking sheet. Put in the oven and cook for 25-30 minutes, or until done.
Remove from oven and let cool.
Lay meatballs on a bed of greens and orzo, then sprinkle with pistachios.
Top with a dollop of Cedar’s Tzatziki (any flavor), grab a fork and enjoy.
