Mediterranean Meatballs

Traditional meatballs with a Mediterranean flair.
Serves 4 Total 30-40 Minutes

INGREDIENTS

  • 1 cup orzo, cooked
  • ½ cup Cedar’s Tzatziki, any flavor
  • ¼ cup unshelled pistachios, chopped
  • ½ cup greens
Meatballs
  • 1 pound ground beef
  • ½ cup breadcrumbs
  • ½ cup milk
  • 1 large egg
  • ½ cup Parmesan, grated
  • 2 teaspoons kosher salt
  • 2 teaspoons ground black pepper

DIRECTIONS

  1. Preheat oven to 400 °F.
  2. In a mixing bowl, combine the breadcrumbs and milk. Stir to combine.
  3. Whisk the egg, Parmesan, salt and black pepper in a separate bowl.
  4. Combine the two bowls and mix.
  5. Combine ground beef with the mix. Form into meatballs with hands.
  6. Line meatballs on an aluminum foil-covered baking sheet. Put in the oven and cook for 25-30 minutes, or until done.
  7. Remove from oven and let cool.
  8. Lay meatballs on a bed of greens and orzo, then sprinkle with pistachios.
  9. Top with a dollop of Cedar’s Tzatziki (any flavor), grab a fork and enjoy.
