Maple Roasted Acorn Squash Pizza

Slice, slice baby.
Serves 4 Total 30-60 Minutes

INGREDIENTS

16 oz pizza dough
1/2 cup cheddar curds
1 acorn squash
2 tablespoons maple syrup
4 tablespoons olive oil
1 small white onion, thinly sliced
1 cup spinach
5 oz Cedar’s Topped Organic Garlic Hommus
Salt and pepper

DIRECTIONS

  1. Heat oven to 400 °F.
  2. Slice and deseed the acorn squash.
  3. Drizzle with olive oil and maple syrup and season with salt and pepper.
  4. Bake for 18 minutes.
  5. As the squash cooks, caramelize the onions over medium heat in a splash of olive oil. When they have started to caramelize, add the spinach to the pan.
  6. Remove the squash from the oven and set aside.
  7. Increase the oven temperature to 475 °F.
  8. Roll out the pizza dough.
  9. Drizzle with olive oil and top with cheddar curds.
  10. Bake for 8-10 minutes.
  11. Remove pizza from the oven and top with roasted acorn squash, onions and spinach.
  12. Dollop with Cedar’s Topped Organic Garlic Hommus.
