Sweet n' Savory Baked Pear Salad

Filled with gorgonzola, walnuts and herbs, you’re going to want to pear up with this satisfying salad dish, pronto.

INGREDIENTS

  • 4 pears
  • 10 oz Cedar’s Topped Organic Mediterranean Hommus
  • ½ cup gorgonzola cheese
  • ¼ cup chopped walnuts
  • 1 tbs butter
  • 4 cups arugula
  • 2 tbs maple syrup
  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tbs mustard
  • Fresh thyme
  • Salt and pepper
Serves 4 Total 30-60 Minutes

DIRECTIONS

  1. Preheat oven to 375 degrees.
  2. Cut pears in half and scoop out seeds.
  3. Season with salt and pepper.
  4. Bake in a butter-lined baking dish, cut side down, for 25 minutes at 375 degrees.
  5. Remove pears from oven and fill with gorgonzola cheese and walnuts, then return to oven and bake for 5 additional minutes.
  6. In the meantime, shake up a vinaigrette in a mason jar using maple syrup, olive oil, apple cider vinegar, and mustard.
  7. Dress the arugula leaves.
  8. On each plate, spoon a dollop of Cedar’s Topped Organic Mediterranean Hommus, dressed arugula salad and two baked pear halves.
  9. Garnish with fresh thyme leaves.
