Sweet n' Savory Baked Pear Salad

Total 30-60 Minutes
INGREDIENTS
1 10-oz container of Cedar’s Topped Organic Mediterranean Hommus
4 pears
½ cup Gorgonzola cheese
¼ cup walnuts, chopped
1 tablespoon butter
4 cups arugula
2 tablespoons maple syrup
½ cup olive oil
¼ cup apple cider vinegar
1 tablespoon mustard
Fresh thyme
Salt and pepper
DIRECTIONS
Heat oven to 375 °F.
Cut pears in half and scoop out seeds.
Season with salt and pepper.
Bake in a butter-lined baking dish, cut side down, for 25 minutes.
Remove pears from oven and fill with Gorgonzola cheese and walnuts, then return to oven and bake for 5 additional minutes.
In the meantime, mix a vinaigrette using maple syrup, olive oil, apple cider vinegar and mustard.
Dress the arugula leaves.
On each plate, spoon a dollop of Cedar’s Topped Organic Mediterranean Hommus, dressed arugula salad and two baked pear halves.
Garnish with fresh thyme leaves.
