Whole Roasted Carrots with Topped Organic Garlic Hommus

INGREDIENTS
Cedar’s Topped Organic Garlic Hommus
12 whole carrots with greens
½ cup pomegranate seeds
Olive oil
Salt and pepper
Pine nuts
Parsley
DIRECTIONS
Peel carrots and trim greens.
Drizzle carrots with olive oil and season with salt and pepper.
Roast at 400 °F for 20-25 minutes.
Spread hommus on a serving platter and top with roasted carrots.
Garnish with pomegranate seeds, pine nuts and fresh parsley.
