Tzatziki Veggie Burger

A veggie burger by any other name would not taste as great. One bite and you may never go back to the conventional kind.


  • 2 cups button mushrooms, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 cup cooked brown rice
  • 1 large carrot, grated
  • ½ tablespoon lemon zest (½ large lemon)
  • ¼ teaspoon cayenne pepper, or more to taste
  • 1 egg, lightly beaten
  • 1 cup whole wheat bread crumbs
  • ¼ cup parsley, chopped
  • salt and pepper, to taste
  • olive oil
  • Cedar’s Tzatziki
  • 4 large (8 small) buns of your choice
  • avocado slices
  • sprouts
Serves 4 Total 15-29 Minutes


  1. Drizzle a heavy skillet over medium-high heat with olive oil and add the mushrooms and onions.
  2. Cook for 10-15 minutes or until liquid has evaporated and the mushrooms and onions are starting to brown.
  3. Add the garlic and cumin and stir to combine.
  4. Cook another 2 minutes. Let cool.
  5. Mix the cooked rice and mushroom mixture with the carrot, lemon zest, cayenne, egg, bread crumbs, parsley and a few generous pinches of salt and pepper.
  6. If the mixture is a bit wet, add more bread crumbs.
  7. Form into patties and pan fry on a heavy skillet drizzled with olive oil over medium-high heat.
  8. Cook for 5-6 minutes or until golden brown on to bottom.
  9. Flip and brown the other side.
  10. Place on a bun topped with Cedar’s Tzatziki, avocado slices, sprouts and your favorite toppings.
