Tzatziki Veggie Burger

Serves 4 Total 15-29 Minutes

INGREDIENTS

  • Cedar’s Tzatziki, any flavor
  • 2 cups button mushrooms, diced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 cup brown rice, cooked 
  • 1 large carrot, grated
  • ½ tablespoon lemon zest (½ of a large lemon)
  • ¼ teaspoon cayenne pepper, to taste
  • 1 egg, lightly beaten
  • 1 cup whole wheat breadcrumbs
  • ¼ cup parsley, chopped
  • Salt and pepper, to taste
  • Olive oil
  • 4 large (or 8 small) buns of your choice
  • Avocado slices
  • Sprouts

DIRECTIONS

  1. Drizzle a heavy skillet with olive oil, put over medium high heat, and add the mushrooms and onions.
  2. Cook for 10-15 minutes or until the liquid has evaporated and the mushrooms and onions are starting to brown.
  3. Add the garlic and cumin and stir to combine.
  4. Cook for another 2 minutes. Let cool.
  5. Mix the rice and mushroom mixture with the carrot, lemon zest, cayenne pepper, egg, breadcrumbs, parsley and a few generous pinches of salt and pepper.
  6. If the mixture is a bit wet, add more breadcrumbs.
  7. Form mixture into patties and pan fry in the skillet.
  8. Cook for 5-6 minutes, or until golden brown on the bottom.
  9. Flip and brown the other side.
  10. Place on a bun topped with Cedar’s Tzatziki (any flavor), avocado slices, sprouts and your favorite toppings.
