PRINT RECIPE
Serves 4
Total 15-29 Minutes
INGREDIENTS
Cedar’s Tzatziki, any flavor
2 cups button mushrooms, diced
1 small onion, diced
2 garlic cloves, minced
1 teaspoon cumin
1 cup brown rice, cooked
1 large carrot, grated
½ tablespoon lemon zest (½ of a large lemon)
¼ teaspoon cayenne pepper, to taste
1 egg, lightly beaten
1 cup whole wheat breadcrumbs
¼ cup parsley, chopped
Salt and pepper, to taste
Olive oil
4 large (or 8 small) buns of your choice
Avocado slices
Sprouts
DIRECTIONS
Drizzle a heavy skillet with olive oil, put over medium high heat, and add the mushrooms and onions.
Cook for 10-15 minutes or until the liquid has evaporated and the mushrooms and onions are starting to brown.
Add the garlic and cumin and stir to combine.
Cook for another 2 minutes. Let cool.
Mix the rice and mushroom mixture with the carrot, lemon zest, cayenne pepper, egg, breadcrumbs, parsley and a few generous pinches of salt and pepper.
If the mixture is a bit wet, add more breadcrumbs.
Form mixture into patties and pan fry in the skillet.
Cook for 5-6 minutes, or until golden brown on the bottom.
Flip and brown the other side.
Place on a bun topped with Cedar’s Tzatziki (any flavor), avocado slices, sprouts and your favorite toppings.
