Portabella Stacker

We’ll admit it. We stacked the deck on this one. This portabella stacker is layered with Mediterranean flavor you and your guests will crave all summer long.


  • Cedar’s Roasted Red Pepper Hommus
  • Cedar’s Tzatziki
  • 2 portabella mushrooms
  • 1 zucchini
  • 1 tomato, sliced
  • bell pepper
  • fresh basil
  • olive oil
  • salt and pepper
Serves 2 Total 30-60 Minutes


  1. Heat grill to medium high. Cut zucchini and bell pepper into slabs. Brush mushrooms, zucchini and bell pepper with olive oil and season with salt and pepper.
  2. Grill for 8-10 minutes, flipping halfway through.
  3. Remove grilled veggies and begin to build the portabella stacker. Start with a mushroom, tomato slice and top with a scoop of hommus and fresh basil. Serve with Cedar’s Tzatziki.
