Mediterranean Tacos

Level up your Taco Tuesdays.
Serves 4 Total 30-60 Minutes

INGREDIENTS

  • 1 8-oz container of Cedar’s Artichoke Kalamata Hommus
  • 2 tomatoes, diced
  • 1 large cucumber, peeled and diced
  • 1 small red onion, diced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 chicken breasts, cooked and sliced (or store-bought rotisserie chicken)
  • 1 ½ cups lettuce, shredded
  • 1 can of artichoke hearts, drained
  • Black olives, sliced
  • ½ cup feta, crumbled
  • 4 pitas

DIRECTIONS

  1. In a large bowl, combine tomatoes, cucumber, red onion, red wine vinegar, olive oil, salt and pepper. 
  2. Toss to evenly combine and set aside.
  3. Lightly warm the pitas in the oven or on the stove top. Spread a good amount of Cedar's Artichoke Kalamata Hommus on the bottom of each pita. 
  4. Top with chicken, lettuce, artichoke hearts, tomato/cucumber/onion mix, olives and feta. 
  5. Fold up like a taco and serve.
