Mediterranean Tacos

Classic taco design meets delicious Mediterranean flavors in this amazing recipe that serves four and is ready in a half hour.


  • 2 tomatoes, diced
  • 1 large cucumber, peeled & diced
  • 1 small red onion. diced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 8-oz Cedar’s Artichoke Kalamata Hommus
  • 2 chicken breasts, cooked and sliced (or store-bought rotisserie chicken)
  • 1 ½ cups shredded lettuce
  • 1 can artichoke hearts, drained
  • sliced black olives
  • ½ cup feta cheese, crumbled
  • 4 pita breads
Serves 4 Total 30-60 Minutes


  1. In a large bowl combine diced tomatoes, peeled and diced cucumber, diced red onion, red wine vinegar, olive oil, salt and pepper. 
  2. Toss to evenly combine and set to the side.
  3. Lightly warm the pita bread in the oven or on the stove top. Spread a good amount of Artichoke Kalamata Hommus on the bottom of each pita bread. 
  4. Top with the chicken, shredded lettuce, artichoke hearts, tomatoes/cucumbers/onion mix, olives and feta cheese. 
  5. Fold up like a taco and serve.
