Mediterranean Rice Pilaf

Rice is nice, but Cedar’s makes it sweeter …
Serves 3 Total 15-29 Minutes

INGREDIENTS

  • 1 14-oz container of Cedar’s Taboule Salad
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons slivered almonds
  • Salt and pepper for seasoning

DIRECTIONS

  1. Heat olive oil in a pot over medium heat. Add garlic and cook until soft, about 3 minutes.
  2. Add the rice to the pot and stir until all of the grains are evenly coated. Continue cooking and stirring the rice for another minute or two until the corners of the grains are translucent.
  3. Pour in the water, add two teaspoons of salt and bring to a boil.
  4. Once at boil, reduce to a simmer and cover the pot. Cook until heated through. Cook for 15-18 minutes, until the liquid has been absorbed.
  5. Remove from heat, add to platter and let cool for 5-8 minutes.
  6. Mix in Taboule Salad and almonds. Season with salt and pepper.
