Mediterranean Grilled Bruschetta Chicken

As if fresh-off-the-vine tomato bruschetta wasn’t satisfying enough, we’re taking it to a whole new summer-loving level by adding grilled chicken and our Topped Organic Roasted Red Pepper Hommus. Go ahead. Try it!

INGREDIENTS

  • 4 chicken breasts
  • Cedar’s Topped Organic Roasted Red Pepper Hommus
  • fresh mozzarella cheese
  • 1 pint of cherry tomatoes
  • 1 clove of garlic, diced
  • 2-4 tablespoons olive oil
  • salt and pepper
  • fresh basil
Serves 4 Total 30-60 Minutes

DIRECTIONS

  1. Halve the cherry tomatoes and season with 2-4 tablespoons olive oil, salt and pepper.
  2. Add diced garlic and 6 large basil leaves, torn to small pieces. Set aside.
  3. Brush chicken breasts with olive oil and season with salt and pepper.
  4. Grill chicken breasts on medium high heat for 10-12 minutes, flipping halfway through.
  5. Top with a dollop of hommus, a slice of fresh mozzarella cheese, and a scoop of bruschetta.
  6. Garnish with fresh basil.
