Tzatziki Loaded Baked Potato

Tzatziki Loaded Baked Potato

INGREDIENTS
2 large potatoes
2 tablespoons butter
4 tablespoons Cedar’s Tzatziki, any flavor
½ cup Kalamata olives
½ cup feta cheese, crumbled
½ cup chickpeas
½ cup tomatoes, roasted
½ cup arugula
4 teaspoons oregano
DIRECTIONS
Preheat oven to 450 °F.
Poke holes in the potatoes with a fork, then place on an aluminum foil-covered baking sheet.
Bake for 25 minutes.
Remove from oven and brush each potato with 1 tablespoon of butter.
Bake for an additional 20 minutes, or until the inside of the potatoes are soft. Check with a fork every five minutes until desired doneness.
Remove from oven and slice potatoes in half.
Top each potato with 1 teaspoon oregano, ¼ cup Kalamata olives, ¼ cup feta cheese, ¼ cup chickpeas, ¼ cup roasted tomatoes, ¼ cup arugula and 2 tablespoons Cedar’s Tzatziki (any flavor).
Top each potato with 1 additional teaspoon of oregano and serve.
