Tzatziki Loaded Baked Potato

A potato loaded the Mediterranean way.
Serves 2 Total 45-60 Minutes

INGREDIENTS

  • 2 large potatoes
  • 2 tablespoons butter
  • 4 tablespoons Cedar’s Tzatziki, any flavor
  • ½ cup Kalamata olives
  • ½ cup feta cheese, crumbled
  • ½ cup chickpeas
  • ½ cup tomatoes, roasted
  • ½ cup arugula
  • 4 teaspoons oregano

DIRECTIONS

  1. Preheat oven to 450 °F.
  2. Poke holes in the potatoes with a fork, then place on an aluminum foil-covered baking sheet.
  3. Bake for 25 minutes.
  4. Remove from oven and brush each potato with 1 tablespoon of butter.
  5. Bake for an additional 20 minutes, or until the inside of the potatoes are soft. Check with a fork every five minutes until desired doneness.
  6. Remove from oven and slice potatoes in half.
  7. Top each potato with 1 teaspoon oregano, ¼ cup Kalamata olives, ¼ cup feta cheese, ¼ cup chickpeas, ¼ cup roasted tomatoes, ¼ cup arugula and 2 tablespoons Cedar’s Tzatziki (any flavor).
  8. Top each potato with 1 additional teaspoon of oregano and serve.
