Sweet n’ Smoky Smashed Potatoes

A smashing good side.
Serves 4 Total 30-60 Minutes

INGREDIENTS

1 10-oz container of Cedar’s Topped Organic Jalapeño Hommus
2 pounds small potatoes
10 oz barbecue jackfruit
½ cup olive oil
2 tablespoons fresh cilantro
Salt and pepper to taste

DIRECTIONS

  1. Boil potatoes in salted water for 15 minutes.
  2. Drain potatoes and spread them evenly on a baking sheet.
  3. Heat the oven to 425 F.
  4. Gently press down on each potato with the bottom of a glass to smash it.
  5. Coat potatoes with a drizzle of olive oil and season with salt and pepper.
  6. Bake for 12 minutes.
  7. Remove potatoes from the oven and flip them with a spatula.
  8. Drizzle with more olive oil and season again with salt and pepper.
  9. Bake for an additional 10-12 minutes.
  10. Remove potatoes from the oven and top with a dollop of Cedar’s Topped Organic Jalapeño Hommus and heated jackfruit.
  11. Garnish with fresh cilantro.
