Stuffed Artichoke Hearts

These 'chokes are no joke.
Serves 4 Total Over an Hour

INGREDIENTS

Cedar's Topped Organic Lemon Hommus
4 artichokes, trimmed and halved, chokes removed
4-6 tablespoons olive oil
Salt and pepper to taste
1 lemon, sliced

DIRECTIONS

  1. Prehead oven to 425 °F.
  2. Arrange artichokes cut side up in a baking dish. Drizzle with half of the olive oil and season with salt and pepper.
  3. Flip artichokes to cut side down. Drizzle with the remaining olive oil and season with salt and pepper. 
  4. Cover with aluminum foil and roast for 60 minutes. 
  5. Remove from the oven and serve with a dallop of Cedar's Topped Organic Lemon Hommus and garnish with fresh lemon.
