Shakshuka Hommus Bowl

Shakshuka, rattle and roll.
Serves 4 Total 30-60 Minutes

INGREDIENTS

28-oz can of fire roasted diced tomatoes
½ teaspoon paprika
½ teaspoon cumin
2 tablespoons olive oil
1 red bell pepper, diced
1 small white onion, diced
4 eggs
2 tablespoons fresh parsley, chopped
2 tablespoons fresh chives, diced
1 10-oz container of Cedar’s Topped Organic Roasted Red Pepper Hommus
4 slices sourdough
Salt and pepper to taste

DIRECTIONS

  1. Sauté onion and red pepper with paprika and cumin in olive oil over medium heat.
  2. Add tomatoes.
  3. When tomatoes come to a simmer, crack eggs over the tomato sauce and let poach for about 4 minutes.
  4. Top with salt, pepper, parsley and chives.
  5. Spoon hommus into a shallow bowl and serve the shakshuka over hommus with sourdough.
