Savory Falafel Waffles

Spare the maple syrup and spread hommus. These Savory Falafel Waffles are the epitome of surprise and delight.


  • 1 can of chickpeas, drained
  • 1 large onion, diced
  • 4 garlic cloves
  • ½ cup fresh parsley
  • ½ cup fresh cilantro
  • ¼ teaspoon chili powder
  • 2 teaspoons baking powder
  • ½ cup flour
  • 1 teaspoon salt
  • 1 quart grape tomatoes, sliced
  • 1 cup arugula
  • Cooking oil spray
  • Cedar’s Topped Organic Roasted Red Pepper Hommus 
Serves 4 Total 30-60 Minutes


  1. Pulse chickpeas, onion, garlic, parsley, cilantro, chili powder, baking powder, flour and salt in a food processor until they are coarsely blended. Be careful not to puree.
  2. Refrigerate batter for 1 hour.
  3. Heat non-stick waffle iron and spray with cooking spray.
  4. Scoop batter into waffle iron and cook until crispy.
  5. Garnish with arugula and grape tomatoes.
  6. Serve hot with Cedar’s Topped Organic Roasted Red Pepper Hommus.
