Portabello Stacker

We’ll admit it. We stacked the deck on this one. This portabello stacker is layered with Mediterranean flavor you and your guests will crave all summer long.

INGREDIENTS

  • Cedar’s Roasted Red Pepper Hommus
  • Cedar’s Cucumber Garlic Tzatziki
  • 2 portabello mushrooms
  • 1 zucchini
  • 1 tomato, sliced
  • 1 red onion, sliced
  • Bell pepper
  • Fresh basil
  • Olive oil
  • Salt and pepper
Serves 2 Total 30-60 Minutes

DIRECTIONS

  1. Heat grill to medium high. Cut zucchini, bell pepper and red onion into slabs. Brush mushrooms, zucchini, bell pepper and red onion with olive oil and season with salt and pepper.
  2. Grill for 8-10 minutes, flipping halfway through.
  3. Remove grilled veggies and begin to build the portabello stacker. Start with a mushroom, a scoop of hommus, bell pepper, zucchini, red onion, tomato slice and top with fresh basil. Serve with Cedar’s Cucumber Garlic Tzatziki.
