Mushroom Risotto

Serves 2 Total 30-60 Minutes


1/2 cup Cedar’s Original Hommus
2 cups rice, cooked
1 cup mushrooms, chopped
1 small onion, chopped
2 garlic cloves, finely chopped
2 tablespoons olive oil
1/2 cup vegetable broth
1 tablespoon soy sauce
2 teaspoons fresh thyme leaves
Optional: Parmesan for garnish, grated


  1. Over low to medium heat, sauté onion and garlic in olive oil.
  2. Add mushrooms.
  3. Let the vegetables cook until the onions are translucent.
  4. Add vegetable broth, soy sauce and rice.
  5. Cook for 8-10 minutes and remove from heat.
  6. Stir in Cedar’s Original Hommus and garnish with thyme and Parmesan.
