Mediterranean-Style Hasselback Baked Potatoes

Don’t mess with a good thing. Unless of course you’re putting a flavorful Mediterranean twist on Hasselback potatoes


  • Cedar’s Organic Garlic Hommus
  • 4 Yukon Gold potatoes
  • Olive oil
  • Salt and pepper
  • Fresh thyme
Serves 4 Total 30-60 Minutes


  1. Heat oven to 425 F.
  2. Slice potatoes thinly, leaving the bottom of the potato intact.
  3. Brush entire potatoes with olive oil and season with salt and pepper and fresh thyme.
  4. Bake for 20 minutes and baste with more olive oil.
  5. Bake for an additional 30-40 minutes.
  6. Top with a generous dollop of Cedar's Organic Garlic Hommus and your favorite baked potato toppings.
