Mediterranean Latkes

Serves 4-6
Total 30-60 Minutes
INGREDIENTS
1 10-oz container of Cedar’s Topped Organic Garlic Hommus
2 pounds Yukon Gold potatoes
1 yellow onion
1 egg
⅓ cup flour
½ cup vegetable oil
1 teaspoon salt
½ teaspoon pepper
Fresh dill
DIRECTIONS
Shred potatoes and onion.
Place in a colander and let the liquid drain out for 10-15 minutes.
Press any additional liquid out with your hands.
In a mixing bowl, mix potatoes and onion with flour, egg, salt and pepper.
Coat the bottom of a skillet in vegetable oil and turn to medium high heat.
Pan fry latkes for 3 minutes on each side, flattening them with the back of a spatula.
Keep warm in the oven while frying the rest of the mixture in batches. When done, serve with dollops of Cedar’s Topped Organic Garlic Hommus with fresh dill for garnish.
