Hommus Stuffed Acorn Squash

Step aside, stuffing.
Serves 2 Total Over an Hour


  • 1 large acorn squash
  • 4 tablespoons olive oil
  • 10 oz Cedar’s Organic Original Hommus
  • ½ cup chickpeas, drained
  • Salt and pepper to taste
  • 2 tablespoons parsley, chopped
  • 1 cup, choice of protein (optional)


  1. Preheat oven to 350 °F.
  2. Carefully quarter the acorn squash into wedges. Remove the seeds.
  3. Place on a sheet pan. Drizzle with olive oil and season with salt and pepper.
  4. Roast in the oven for 45 minutes.
  5. Remove from the oven and serve each wedge with a dollop of Cedar’s Organic Original Hommus.
  6. Add choice of protein, if desired.
  7. Garnish with chickpeas, parsley, a drizzle of olive oil and a sprinkle of salt.
