Hommus Stuffed Acorn Squash

INGREDIENTS
1 large acorn squash
4 tablespoons olive oil
10 oz Cedar’s Organic Original Hommus
½ cup chickpeas, drained
Salt and pepper to taste
2 tablespoons parsley, chopped
1 cup, choice of protein (optional)
DIRECTIONS
Preheat oven to 350 °F.
Carefully quarter the acorn squash into wedges. Remove the seeds.
Place on a sheet pan. Drizzle with olive oil and season with salt and pepper.
Roast in the oven for 45 minutes.
Remove from the oven and serve each wedge with a dollop of Cedar’s Organic Original Hommus.
Add choice of protein, if desired.
Garnish with chickpeas, parsley, a drizzle of olive oil and a sprinkle of salt.
