Heirloom Tomato Pie

Serves 4 Total 30-60 Minutes

INGREDIENTS

  • ½ cup Cedar’s Balsamic Caramelized Onion Hommus
  • 1 prepared pie dough
  • 1 cup Gruyere cheese
  • ½ cup Parmesan 
  • ½ cup plain Greek yogurt
  • 1 egg
  • 3 heirloom tomatoes
  • Fresh thyme
  • Salt and pepper

DIRECTIONS

  1. Roll out a prepared pie dough into a pie dish.
  2. Pinch the edges between your fingers for a decorative crimped edge.
  3. Parbake the pie crust for 10 minutes at 375 F.
  4. Meanwhile, make the filling.
  5. Mix Gruyere cheese and Parmesan, plain Greek yogurt, Cedar's Balsamic Caramelized Onion Hommus and egg together and pour into a pre-baked pie shell.
  6. Cut tomatoes into slices and dry with a paper towel.
  7. Top pie with slices of heirloom tomatoes.
  8. Season with salt and pepper.
  9. Bake for 30 minutes at 350 F.
  10. Garnish with thyme leaves.
