Heirloom Tomato Pie

INGREDIENTS
½ cup Cedar’s Balsamic Caramelized Onion Hommus
1 prepared pie dough
1 cup Gruyere cheese
½ cup Parmesan
½ cup plain Greek yogurt
1 egg
3 heirloom tomatoes
Fresh thyme
Salt and pepper
DIRECTIONS
Roll out a prepared pie dough into a pie dish.
Pinch the edges between your fingers for a decorative crimped edge.
Parbake the pie crust for 10 minutes at 375 °F.
Meanwhile, make the filling.
Mix Gruyere cheese and Parmesan, plain Greek yogurt, Cedar's Balsamic Caramelized Onion Hommus and egg together and pour into a pre-baked pie shell.
Cut tomatoes into slices and dry with a paper towel.
Top pie with slices of heirloom tomatoes.
Season with salt and pepper.
Bake for 30 minutes at 350 °F.
Garnish with thyme leaves.
