Harissa Hommus Salad

INGREDIENTS
1 8-oz container of Cedar’s Harissa Hommus
3 cups kale, chopped
2 carrots, peeled into ribbons
1 bell pepper, sliced
4-6 cherry tomatoes, halved
1 red onion, sliced
1 zucchini, grilled
2 tablespoons olive oil
Salt and pepper
DIRECTIONS
Cut zucchini lengthwise and coat with oil.
Season with salt and pepper.
Grill on medium high heat for 3 minutes on each side, or until tender.
Assemble a salad with kale, carrots, bell pepper, cherry tomatoes, red onion and zucchini.
Serve with Cedar’s Harissa Hommus.
Drizzle with remaining olive oil and season with salt and pepper.
