Harissa Hommus Salad

Mediterranean flavor heaven.
Serves 2 Total 15-29 Minutes

INGREDIENTS

  • 1 8-oz container of Cedar’s Harissa Hommus
  • 3 cups kale, chopped
  • 2 carrots, peeled into ribbons
  • 1 bell pepper, sliced
  • 4-6 cherry tomatoes, halved
  • 1 red onion, sliced
  • 1 zucchini, grilled
  • 2 tablespoons olive oil
  • Salt and pepper

DIRECTIONS

  1. Cut zucchini lengthwise and coat with oil.
  2. Season with salt and pepper.
  3. Grill on medium high heat for 3 minutes on each side, or until tender.
  4. Assemble a salad with kale, carrots, bell pepper, cherry tomatoes, red onion and zucchini.
  5. Serve with Cedar’s Harissa Hommus.
  6. Drizzle with remaining olive oil and season with salt and pepper.
