Grilled Eggplant Toast

Serves 2 Total 30-60 Minutes


8 oz Cedar's Roasted Red Pepper Hommus
4 slices of focaccia 
1 eggplant, sliced 1/4-inch thick
1 medium sweet onion, sliced 1/4-inch thick
4 tablespoons olive oil
Salt and pepper to taste


  1. Brush eggplant, onion and focaccia slices with olive oil and season with salt and pepper.
  2. Grill over medium high heat until the vegetables are cooked through and the focaccia is toasted.
  3. Spread Cedar's Roasted Red Pepper Hommus on focaccia and top with grilled eggplant and onion.
