Crispy Fritters

Serves 2
Total 15-20 Minutes
INGREDIENTS
3 cups flour
2 cups milk
2 eggs
2 cups chopped zucchini
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons oil
½ cup Cedar’s Tzatziki, any flavor
¼ cup scallions, chopped
DIRECTIONS
Combine flour and eggs into a large bowl. Whisk.
Add milk, salt, pepper and zucchini. Mix.
Heat oil in a nonstick frying pan on medium high heat.
Add ¼ of the fritter batter to the pan and fry until golden brown and crispy, 3-5 minutes.
Flip and cook for 3-5 more minutes.
Repeat with the remaining batter until gone. Makes four fritters total.
Remove fritters to a serving plate and top with scallions.
Scoop ½ cup Cedar’s Tzatziki (any flavor) into a dipping cup.
Serve and enjoy.
