Crispy Fritters

Golden brown and worthy of a gold star.
Serves 2 Total 15-20 Minutes

INGREDIENTS

  • 3 cups flour
  • 2 cups milk
  • 2 eggs
  • 2 cups chopped zucchini
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons oil
  • ½ cup Cedar’s Tzatziki, any flavor
  • ¼ cup scallions, chopped

DIRECTIONS

  1. Combine flour and eggs into a large bowl. Whisk.
  2. Add milk, salt, pepper and zucchini. Mix.
  3. Heat oil in a nonstick frying pan on medium high heat.
  4. Add ¼ of the fritter batter to the pan and fry until golden brown and crispy, 3-5 minutes.
  5. Flip and cook for 3-5 more minutes.
  6. Repeat with the remaining batter until gone. Makes four fritters total.
  7. Remove fritters to a serving plate and top with scallions.
  8. Scoop ½ cup Cedar’s Tzatziki (any flavor) into a dipping cup.
  9. Serve and enjoy.
