Cheesy Garlic Spaghetti Squash

A gold mine of flavor.
Serves 2 Total 30-60 Minutes


1/2 cup Cedar's Garlic Hommus
1 spaghetti squash
6-oz artichoke hearts, diced
1 cup baby spinach
1/4 cup Parmesan
1/4 cup shredded mozzarella cheese
1 tablespoons fresh parsley, chopped


  1. Heat oven to 400.
  2. Cut spaghetti squash in half, remove seeds and roast with the inside facing down for 35 minutes.
  3. Remove squash from oven and loosen noodles with a fork.
  4. Mix noodles with Cedar's Garlic Hommus, spinach, artichoke hearts and Parmesan inside the squash shell.
  5. Top with mozzarella.
  6. Broil for 4 minutes. Garnish with parsley.
