Baked Feta Pasta

Bursting tomatoes, creamy Feta Dip, and pasta come together for a bright, cozy dish that’s as easy as it is delicious.
Serves 4 Total 45-60 minutes

INGREDIENTS

  • 1 cup of Cedar's Feta Dip
  • 1 shallot, quartered
  • 3 garlic cloves, smashed
  • 2 pints cherry tomatoes
  • 1/2 cup extra-virgin olive oil 
  • Kosher salt 
  • A pinch of crushed red pepper flakes
  • 3 sprigs fresh thyme
  • 12 oz cavatappi pasta
  • Zest of 1 lemon
  • Fresh basil, for garnish

DIRECTIONS

  1. Preheat oven to 400 degrees fahrenheit. In a large baking dish, combine shallot, garlic, and cherry tomatoes. Drizzle with olive oil, add salt and crushed red pepper flakes, and toss until well combined. Add thyme sprigs on top. 
  2. Bake until tomatoes are bursting, about 40-45 minutes.
  3. Meanwhile, cook pasta and reserve 1/2 cup of pasta water before draining. 
  4. Add Cedar's Feta Dip, pasta, and lemon zest to baking dish, and stir until well combined. Add more feta if desired. 
  5. Top with fresh basil and enjoy!
