Pumpkin Bruschetta

Fact: Tomato-less bruschetta is not a crime if you add Cedar’s fan favorite, Topped Organic Balsamic Caramelized Onion Hommus with roasted pumpkin, cheese, herbs and greens.

INGREDIENTS

  • 1 baguette, sliced
  • 10 oz Cedar’s Topped Organic Balsamic Caramelized Onion Hommus
  • 1 small sugar pumpkin
  • 8 oz burrata cheese
  • 1 tbs fresh sage, chopped
  • 1/2 cup microgreens
  • 2 tbs olive oil
  • Salt and pepper
Serves 4-6 Total 30-60 Minutes

DIRECTIONS

  1. Peel and cube pumpkin into half-inch sized pieces.
  2. Coat with olive oil, salt and pepper, and roast on a parchment lined baking sheet at 400 degrees for 35-40 minutes.
  3. Brush sliced baguette with olive oil then toast.
  4. Top toast with a spoonful of Cedar’s Topped Organic Balsamic Caramelized Onion Hommus.
  5. Add burrata cheese, roasted pumpkin, and garnish with fresh sage and microgreens.
