Mediterranean Latkes

Latkes. Potato pancakes. Call them what you want — just add a dollop of Cedar’s Topped Organic Garlic Hommus and these will be your new go-to.

INGREDIENTS

  • 2 lbs Yukon Gold potatoes
  • 1 yellow onion
  • 1 egg
  • ⅓ cup flour
  • ½ cup vegetable oil
  • 1 tsp salt
  • ½ tsp pepper
  • Fresh dill
  • 10 oz Cedar’s Topped Organic Garlic Hommus
Serves 4-6 Total 30-60 Minutes

DIRECTIONS

  1. Shred potatoes and onion.
  2. Place in a colander and let the liquid drain out for 10-15 minutes.
  3. Press any additional liquid out with your hands.
  4. In a mixing bowl, mix potatoes and onion with flour, egg, salt and pepper.
  5. Coat the bottom of a skillet in vegetable oil and turn to medium high heat.
  6. Pan fry latkes for 3 minutes on each side, flattening them with the back of a spatula.
  7. Keep warm in the oven while frying the rest of the mixture in batches. When done, serve with dollops of Cedar’s Topped Organic Garlic Hommus with fresh dill for garnish.
