Summer is a great time for gathering, sipping and enjoying fresh, seasonal snacks in the backyard with friends. But the idea of hosting and preparing food can be daunting - especially when you have kiddos to tend to. Today in the Chickpea Kitchen though, we're showing you how to whip up an easy and delicious spread courtesy of
Cedar's family of products! (recipes below!)
Hommus Chicken Salad
Serves: 6-8
Prep Time: 15-20 minutes
Ingredients:
- 4 chicken breasts, shredded
- 1 8 oz container of Cedar's Garlic Kale Hommus
- 2 grilled pitas, cut into fourths (or make lettuce wraps for a healthier option like we did!)
- Salt and pepper, to taste
Directions:
- Mix shredded chicken, hommus, salt and pepper in a large mixing bowl
- Once mixed evenly, place a large dollop of hommus chicken salad on each grilled pita (or lettuce leaf) and serve!
Taboule Pasta Salad
Serves: 8-12
Prep Time: 15-20 minutes
Ingredients:
- 1 12 oz box of tri-colored pasta
- 1 14 oz container of Cedar's Taboule Salad
- 1/2 cup tomatoes, diced
- 1/2 cup cucumbers, diced
- 1 8 oz container of feta cheese, crumbled
Directions:
- Boil pasta for 8 minutes
- Pour cooked pasta into large mixing bowl, adding taboule salad, feta cheese and veggies
- Mix well until pasta is fully coated and serve
Tzatziki Spinach Wraps
Serves: 8-12
Prep Time: 5 minutes
Ingredients:
Directions:
- Spread tzatziki over each wrap
- Roll up each wrap and slice each into 4-6 pieces
- Secure each slice with a toothpick for serving
